Meet AaronWillow Head Chef
Aaron James McLellan is a chef with over a decade of experience, having spent the past 12 years honing his craft in some of the most respected fine dining kitchens across Scotland and the North East of England.
His career has seen him take on roles at restaurants such as Aizle, Greywalls, and The Torridon, each shaping his approach to refined, ingredient-led cooking. He is now embarking on an exciting new chapter with the opening of his own venture, Restaurant Willow, set within the former site of Hjem as part of Hadrian’s Hotel.
Rooted in classic French technique, elevated by a deep respect for British produce and a commitment to seasonality. His menus are thoughtfully curated to reflect the natural rhythm of the land, often incorporating foraged ingredients to bring authenticity to each dish.
